Antiche Aziende Canosine owns a farm which extends on an area of 30 hectares divided into different estates from 250 to 350 metres on the sea level. The typology of grounds depends on the position of the estates. They are clayey sand, white calcareous and tufa grounds, all of very old origin. Some of them originated in the period from the Cretaceous to the Pliocene. Vineyards are built using both the Apulian “pergola” system and the “espalier a guyot”. The Apulian “pergola system” is also called “Apulian Tendone” and it was invented in order to exploit sunlight to the full. This kind of system allows to obtain a maximum of 5-6 kilos from each plant. The main cultivations of the farm are Trebbiano, Muscat grapes and Chardonnay as regards white berry grapes; Sangiovese, Montepulciano and Nero di Troia as regards red berry grapes.
